Ingredients
125g Butter
2 eggs - (room temperature is better)
2 cups SR Flour
1/2 tsp Salt
3/4 cup Castor Sugar
1 tsp Vanilla Essence
3/4 cup Milk
Method
Beat butter and sugar until fluffy. Add eggs one at a time, beating well after each addition. Add vanilla and beat well. Sift flour and stir in alternatively with milk, beating after each addition, beginning and ending with the flour.
Bake in a moderate oven until cake is golden and shrinks a little from the sides. (A fan forced about 25mins).
This quantity can be used for a 28x18cm lamington tin or for two 20cm round sandwich tins.
Tip
A strawberry, plum or cherry jam is nice when combined with freshly beaten cream laced with a bit of castor sugar if making a sandwich cake!! Sprinkle some icing sugar on the top for decoration. If really fancy, sieve/sprinkle over a doily for a pretty and tempting pattern!!
